I am new to OBS and for whatever reason when I change profiles the scenes I selected don't change with it. So when i want to change profiles I have to rebuild my scenes from scratch every time. is there a way to fix this?

Profiles and Scene Collections are separate things. They don't change together.
Profiles store information about your back-end settings; bitrate, resolution, where you're streaming to, or if you're just recording locally.
Scene Collections are just that. Sets of scenes. I have one for halloween with all of my pumpkin themed stuff, one for christmas, one for everyday, others for niche games. Sounds like you need to save your scenes to one of these, make a new one, and set up the next set in that. Or keep a template scene collection and just Duplicate it off as a new name when you want to set up a new one without the hassle of setting up the bones.
