HELP ! ! why is Settings > Output> Output Mode> ghosted on "simple" , & REC set only to mkv ?

Thanks so much for reading-- I am on v27.0.1 Win64-- haven't used OBS in many months. I just want a reliable screen recording in a reliable format.
This is a Record-only use of OBS, for a tele-visit of approx. 45 minutes.
If .mkv is fine, please explain why.
