Question / Help Help w/ recording in-game audio on SEPARATE channels

Hi guys! So, I'm trying to build a portfolio of my own fan trailers of various games. I've had success with games like Journey and Inside on PS4 since they're free of any sort of voiceover. However, I'd like to transition to making trailers from games like Call of Duty Infinite Warfare and perhaps Uncharted 4.

My question is, if these games support 5.1 audio, would it be possible to record gameplay with the audio being saved on separate channels so I can use voiceovers and music independently?

If it helps, I use an Extremecap U3 when I record console gameplay. PC gameplay is just PC + OBS.

Can anyone point me in the right direction? If OBS or my capture card cant, whats the best way to go about this?

You'd need a capture card capable of capturing 5.1 audio. And I'm not aware of any consumer cards that can do that. Also OBS Classic can't do that (and this is the OBS Classic support forum), you'd need to use OBS Studio.
