Question / Help Help setting up my OBS for recording

Hi guys, I'm new to OBS and would really like some help setting up my OBS so it's at the best quality it can be when recording videos. I have been using it to record Sims 4 and everything seems to be okay but the quality only seems to be coming out in 720p.

MacOS Catalina version 10.15.4
iMac (Retina 4K, 21.5-inch, 2017)
Processor 3 GHz Quad-Core Intel Core i5
Memory 8 GB 2400 MHz DDR4
Graphics Radeon Pro 555 2 GB

I would just like to know what people would recommend for my settings.

In the output section I know to have it as mp4, but for the encoder part I'm a bit stuck should I have it on either Apple TV H264 Hardware Encoder, the software one or x264? Also what is the best bitrate?

I'm wanting to ideally have my videos coming out in 1080p so how can I get this?

Also whenever I have OBS open my mouse is really laggy and I have a really low fps but when I'm recording it jumps right up to about 59 fps and is absolutely fine, is there a way to fix it so my mouse isn't super laggy when not on my game.

Sorry for all the questions I'm a complete noob to this.
