you'd have to encode twice and you would need two instaces of OBS. the second instance is recommended for local recording and use a hardware encoder such as NVENC or quicksync. http://www.helping-squad.com/use-two-or-more-instances-of-obs/

Record your gameplay with OBS, record your Voice with Audacity then combine in your video editing program of choice.

Nobody does videos in one take anyway.
