Help please to get my Livestream Professional Quality

I am live-streaming an Event to my YouTube channel. Am streaming from the HDMI out on my DJI MAVIC 3 PRO's Remote,, using a VIVITAR Capture Card(specs attached in image)

Using my 2017 iMac with 32GB RAM
WIFI Hotspot from iPhone with an Upload speed of around 6.79Mbps

Can I please get some assistance on setting up and having a professional quality stream,,,?
I have been getting stuttered video, or the dreaded grey waterfall.
