Question / Help Having some stuttering issues with a decent PC

So I have been recording minecraft and been having some issues with stuttering. I don't really notice it on any other game (even the games that are better graphically). It is just on minecraft that I have this stuttering issues. Its pretty minuscule, its only about a half second every 3 mins or so but I do notice it alot and want to improve my quality of video.

My PC Specs:
CPU: i7-7700k
Graphics Card: GTX 1060
Ram: 16 gb

I would think I have a decent PC build so I'm unsure why I'm having this issue. I've been monitoring the stats page and it seems like I have like 1-3% encoding lag. So far using the base systems for OBS have produced the least amount of stuttering as opposed some of the other stuff I have read. So I'm kind of at a loss how I can fix this. I have seen that some people post a log of their issues, so if someone could explain to me how to do that, I can post that and hopefully it will provide better insight into correcting my issue.

I was able to find the logs, however I could not discern which one I did the recording that caused most of the stuttering. I will just post them all.

Start by turning off psycho-active tuning. This NVENC feature, unlike basic encoding, increases GPU load.

Another option would be to switch from the high quality to the quality preset.
