Question / Help Getting some glitching and stuttering in recordings....Hoping someone can check my log for issues

Hi guys, as the title. I'm getting some quick glitching and small stuttering in my gameplay recordings... I'm actually new to all of this and computers itself *facepalm*, but I basically am recording and making gameplays for my sons YouTube channel. He just started, and unfortunately I'm very new to all of this. Did some research on best settings for AMD build PCs and applied those to OBS.. Unfortunately though, the game itself runs fine and looks fine during the live view, but in the finally recordings I notice some glitchiness during some scenes and some lagginess or stuttering... I'm also using 2 instances of OBS, 1 for my face cam and 1 for the gameplay. I was recording Fortnite at 60fps on PC if that helps at all with anything.

I have a
Ryzen 5 3600
Radeon RX 5700 - I know its not the best.
16 GB Ram

I'm recording output on the H264/AVC Encoder

Just wanted to know if someone sees any issues with my logs. ( the most recent recording is near bottom of log for 5/14, and I believe I changed my settings a cpl times during the whole log to try and see if something worked better.)

Also please let me know any other additional info needed.

Sorry for bumping but I can upload a video if it helps anyone see the issue better. Also may someone can suggest some more ideal settings for me, I only record no streaming...
