Encoder overload.

15:51:41.614: adding 42 milliseconds of audio buffering, total audio buffering is now 170 milliseconds (source: VLC Videobron)
15:51:42.372: adding 64 milliseconds of audio buffering, total audio buffering is now 234 milliseconds (source: Desktop Audio)
15:51:47.735: adding 21 milliseconds of audio buffering, total audio buffering is now 256 milliseconds (source: VLC Videobron)

Increasing audio buffering during operation is generally indicative of system overload or USB bus overload (if using multiple USB audio and/or video devices, for instance).

Fortnite is using too much of your GPU and CPU for OBS to operate; you should cap your in-game framerate and/or capture either 720p60 or 1080p30.

There's no streaming session in that log so I can't tell, but changing bitrate would not reduce rendering lag caused by GPU overload. It may be that something else you changed improved the situation, but without the output session in the log it can't be confirmed.
