Question / Help Encoding Overloaded! Consider turning down video settings or use a faster encoding preset

So, I've had this problem for like 2 years and I want to record in 240 fps in minecraft(dont ask I have a channel). So my obs wasn't letting me a year ago so I recorded in 180 and it had a lot of pressure on my game and I could feel the difference when I played vs when I wasn't recording. Now it's not even letting me get above 160 fps without the video being laggy and only shown in single frames at a time or just choppy. I have a gtx 1070 8GB and a i7-7700K @ 4.20 GHz and a 144hz monitor(not sure if that matters) I know I can use higher settings since I have a good computer but it's just not letting me. I also played with my monitor downscaled to 1920 x 1080. (original is 2460 x 1440) Here are my current settings

when I record in mc on average i get around like 800-1,500 FPS so I'm pretty sure its a problem with obs. if anyone can help it would be appreciated a lot
and it only lags when I'm doing things that have a lot of motion usually. it will say (Encoding Overloaded! Consider turning down video settings or use a faster encoding preset) and my fps will start spiking (in obs)
