Question / Help Encoding Overload Error

Been trying to figure out some OBS settings that allow me to record in framerate higher than 140. Trying 240 right now, looks smooth, but with almost all settings I'm getting a consistent "Encoding Overload" Error. I'm not getting a lot of encoding lag, just occasionally getting some skipped frames - but these are unpredictable, and can easily ruin recordings when they come out of nowhere. I've tried closing all other programs on my PC, I'm using NVENC (new) encoder. Just wondered if anyone had any particular settings that work well for them? Have seen a few people manage to record in over 1000 frame rate (with good bitrate) and well, comparing my PC specs to theirs - I'm really not seeing much reason why I'm not able to achieve anything close to that.

My Specs include:
RTX 2080
Intel Core i7 8700 clocked at 3.20GHz
16GB of RAM (DDR4)
I'm playing on a 144Hz monitor, although I doubt that makes much of a difference.

I've attached a log file of me attempting to record with a few settings, the most recent being with a CQ level of 20. Hiring the CPQ does work to an extent, but I still can't go any higher than 240FPS - and the quality really isn't that great. If what I'm looking for isn't possible then that's fine, I'll just have to suck it up I guess lol; thought I'd ask in case someone has some tips. Recording at above 60fps is an unsupported use-case. Recording at 1000fps would require an end-to-end frame timing of less than 1ms, which is EXTREMELY difficult to achieve. 240fps needs under approximately 4ms, which is under what most systems will be able to deliver already.

Some idiotic jackass on Youtube keeps telling newbies to record Minecraft at ridiculously, pointlessly high framerates, with a BS explanation about interpolation quality. A majority of the experienced folks around here want to kick that guy in the damn neck, because he doesn't know what the hell he's talking about.
