Question / Help Encoding lag causes lag spikes in recordings

When I record my games, there is always random lag spikes throughout the recording in times where the movement seems to speed up throughout the game. I have an RTX 2060 and a Ryzen 7 2700 with 16 GB ram. Here are my recording settings and logs from the recording. How do I fix it so it's smooth, because I know my computer can handle the settings because I have friends with weaker specs that can record well with those settings. Please help!

Switch the output mode to Simple.
Set the Recording quality to Indistinguishable.
Set the encoder to NVENC (new).
Run OBS as Administrator.
NEVER EVER record directly to MP4. Record to MKV if you need multi-track audio support, or FLV if you don't. You can remux these to mp4 later from OBS' File menu, Remux Recordings.

Also, you probably should remove your duplicate Game Captures. Having more than one in a scene can cause conflicts. Just use one, and in the Properties for it, point it at whatever you'll be playing that day.
Recording at 120fps is not officially supported. Drop to 60fps, especially for Minecraft recording.
