Encoding error while recording

OBS has worked well for me for around a year, but the past three days, I've been getting encoding errors while recording, which stop the recording. I've tried to lower in game framerates, graphic settings, and OBS output bitrate but none have really helped.

Specs:
GPU: RTX 2070s
CPU: Ryzen 7 3700X
RAM: 16.0 GB 3600 MHz

Try different delivering format (actually MJPEG!) in your camera source...
But there may be more issues. What happend three days ago? Driver updates? Windows updates?

This is a crash of your video driver, usually a sign of unstable hardware (or wrong driver software). Revert overclocks, make sure the machine isn't overheating, make sure the power supply to the GPU card is valid.

I don't know how I would delivering a different format in my cam source, as even if I change it to a custom resolution/fps type, there's no other option to change the video format of the cam source.

As for what happened three days ago, I can't really remember. I do know I updated Windows, but I also know I updated my graphics card to Geforce driver 471.11, and both of those happened within 2 weeks ago, but my brain is a little fried to remember which one took place 3 days ago, if it did at all.

I haven't overclocked anything that I can remember (and if I did, it would probably be minor), the GPU and CPU never sustain anything above 75c, and I have made sure every PSU cable to the GPU card isn't wonky or anything like that. Is it possible it's something else?
 
Incompatibility of GPU and mainboard. As I said: usually, it's a sign of a hardware flaw.
 
I'm sorry, but this is no "how to fix my PC" forum. I'm interested in explaining how OBS works, so you should contact someone else who is able to fix PC hardware issues.

In the windows update section (searching for updates...) there is a possibility to have a look into a list, when under windows which update was installed. You could look there...

If you didn't find a software solution for yourself, you should handover your pc to a local technician/repair center, as koala already mentioned.
