Question / Help Encoder Overloaded [GOOD PC SPECS]

First all I already know some people are going to be p*ssed at me for even requesting help on this matter, but, hear me out please.

I specifically spent thousands and thousands of pounds on a setup that could handle the highest quality games at the highest quality frame-rate. Currently I have an I9 9990k and a GTX 1080 SuperClocked with a Dell 2560x1440 144hz monitor.

My problem is that I can record a game (minecraft) in 240FPS with literally 0 issues, however, I would like to take my quality to the next level like some of the biggest youtubers. This one specific YouTube records minecraft in 600 FPS in 1080p. I KNOW THAT MIGHT SEEM RIDICULOUS but trust me, the quality makes all the difference and now-a-days quality is the only thing that seperates individuals. This specific YouTuber has slightly worse specs than myself and even said he is blown away that his PC can even handle that high of a recording rate.

Here are his recording settings and PC specs:
i7 6700k [4.6 ghz OC] 980 ti [1530+ mhz OC] 16 GB DDR4 RAM [3200 mhz] 500 GB NVMe SSD 2 TB SATA HDD [5400 rpm]

1080p 600 fps CQP 17.

^ Those are the settings that he uses, he then later upscales his video to 4k in Vegas.

My problem is that I'm unable to get any higher than 240 FPS eventhough I have 2000fps+ in-game... what is frustrating is my specs are better and I'm still unable to do it. In obs, my Frame rate DOES NOT fall when I press recording and my CPU usage is essentially nothing but it says encoding overloaded eventhough my frames in-game and obs DO NOT drop.

I've tried everything, a re-install, using my CPU, running as admin.

I understand that 600FPS is so over-kill but it's the type of quality I aim and want to achieve for my videos. Therefore if you could help me solve this issue I would be incredibly grateful!

Recording above 60fps is outside the supported usage-spec of OBS. Even 120fps is borderline. Recording at 600fps is flat-out wankery.
If you want to do that, you'll have to tune your system to be able to composite, render, and encode each frame in under 1.6ms, which will require deep knowledge of the system and setup that goes well beyond the kind of support that can be provided here; most people's timing trees will hit best cumulative times in the 4-8ms range.

Seriously, want to find whoever started this fad and watch them walk in front of a bus.
 
Recording at a high frame rate makes the world of a difference it's phyically noticable and it just frustrates me that some people are able to do it with worse specs and I can't.

Inspirited, there is absolutely no reason to record above 60fps. No streaming or YT services can show above 60fps, and as shown, obviously your PC cannot handle encoding that amount of frames. Everyone who has experience in streaming/recording will tell you the same thing, and that is exactly why there are warnings about your Excessively High Framerate.
 
If you want blur between frames, you can easily add that in post-production. You mention the videos you want to reproduce are edited with Vegas, this effect is likely done there rather than at recording time.
