eGPU pairing with NUC10i3FNH

I recently got a NUC 10th Gen with an i3-10110U CPU and 32 Gb of RAM through a friend and I was thinking about moving from MacOS to Windows for streaming.
The CPU isn't really capable of doing 1080p60 though and I thought about pairing it with an eGPU connected via Thunderbolt 3 (for example the Core X available for around 300€ where I live) and a 1660 Super (also around 300€) to use NVENC.
Source for the stream is a PS4 Pro + Elgato HD60 S+.

My objective would be to get to high profile, slow preset, zerolatency tune and around 6000 kbps 1080p60 (this would be an improvement over my current MacOS setup).
I am, however, worried about possible bottlenecks due to the CPU or the Thunderbolt 3 connection.
Would this setup lead to significant encoding lag or dropped frames? Does anyone have similar experiences?

I could also be willing to experiment and eventually return the GPU and enclosure thanks to Amazon, but I wouldn't know where to start diagnosing possible bottlenecks or issues.
