Question / Help Dual PC setup and layered windows

I stream poker twitch.tv/chasebianchi and I want my HUD(a poker tool that overlays the poker tables) to be visible to me but not showing up on the stream. I know some guys do this, and I think it's done by unchecking the "capture layered windows" which can only be done in Windows 7, and I'm running windows 10. And no, I cannot do window capture due to poker tables opening/closing frequently.

So to my question, if I were to set up a dedicated stream PC(got one collecting dust) with a capture card, could I use my gaming/poker rig in Windows 10, and on my stream PC running Win 7 and would the stream PC OBS still be able to hide the HUD overlay? Does the capture card receive all the layers sent from the gaming PC, or is it flattened into 1 layer when it gets to the stream PC?

Also, if there's an updated version of the Team Liquid program Stream Privacy, or a similar program that works please share it.

Capture card would pick up whatever is shown on your actual monitor. You'd either duplicate the screens or use a splitter. You could do something on the streaming PC to block that part of the screen, or you could stream on a delay. So for example as long as all hands play out in 5 minutes or less, you can't be stream sniped if you set it up with a 300 second delay. No idea how long it takes to play a hand in poker games though.
