DON'T Update OBS STUDIO to 27.1.2.

Many have had issues with the new version 27.1.2 and their microphone not being captured. I just reinstalled the previous version and now all my settings work perfectly.
 
Correct, we halted the update as soon as we noticed and released 27.1.3 to fix the issue. It is safe to skip 27.1.2 and install 27.1.3 now.
