The system has two graphics cards installed in the system and one USB to HDMI adapter connected to USB 3.0 port.
Two display monitors are connected to the first graphics card, two display monitors are connected to the seconds graphics card and one display monitor is connected to the USB to HDMI adapter. A total of 5 display monitors.
When creating a scene with Display Capture as source, OBS lists 3 displays only in the drop down menu (instead of 5). So, no way for me to capture the screen content from the other two displays.

These are the two displays that OBS Display Capture does not show in the drop down menu:
