Dedicated Streaming PC Encoding Overload 1440p

Hey everyone, first time here. I will try to break down my issue as simple as I can. I built a streaming PC in hopes to be able to stream 1440p without a hitch as it's not running games on it. However I have a problem, even 1080p is a struggle and taxing on my dedicated streaming rig. So I want to see if there is something I am doing wrong. I will provide specs, and OBS log of a current session. I see many people able to stream in 1440p with my specs without a problem. I have tried used NVENC but the stream looks way too pixelated and not crisp enough for further content creation. PC SPECS (SHORT)
GPU: GTX 2060
Ram: 24gbs
CPU: i7-8700k
