Having the same issue on Ubuntu 16.04 so are two other people over at:

Terminal output when trying to select nvenc as an encoder in advanced output mode outputs:
"Trace/breakpoint trap"
In simple mode there is no issue switching encoders

I'm seeing this as well with a new 16.04 installation and the latest head code. As soon as I select x264 for the encoder on the Recordings tab in Advanced mode, I get the crash and none of the traditional x264 encoding options display. It works fine on the Stream tab.
