I tried reopening the application and it just keeps crashing. help :(

Looks like it's a crash in the text source. If you can't open OBS to delete the text source, then go into ~/Library/Application Support/obs-studio/basic/scenes and delete your scene JSON file. This will reset your scene, but at least you can start OBS again.

I get the same issue. Can't use FreeType because OBS crashes instantly and won't open again without deleting my scene files.
