Is there a way to have a delay when you press the record button, so you have time to compose yourself?

There is no 'start recording delay' or anything like that, no.
You might consider getting a USB foot pedal and binding it to a hotkey, then assigning that hotkey to start/stop recording in OBS. Then you can compose yourself, and hit the foot-pedal when you're ready and settled.

Start with a "loading" scene.
Create a stinger to go from the loader to the live view.
Have the stinger be however long you need to get ready. 2 secs? 5 secs?

If you're recording, you can start recording whenever you like and cut the beginning in a postprocessing step. Avidemux, a very simple software, is even able to cut lossless without recoding the entire video if you use the "copy" encoder.
