So I'm going to start streaming console games with my avermedia. Now my question is will my graphics card effect anything? Would it effect the quality at all.

No, your graphics card will most likely not affect the quality of the encoding. The only way it could affect the quality of the encoding is if was very slow as compositing the scene together, but you would have to have a pretty slow GPU for that to come up.
