choppy recording when using x.264 i cant figure out why please help

hey guys,
so when i record using x264 my recordings are always choppy and i cant figure out for the life of me why. it works fine if i use nvenc.
id like to use x264 because i want my gpu to focus on running the games. my PC is above average id say so it should run it just fine.
pc specs

ryzen 9 3900x
rtx 2080 super
32gb ram 3600hz
1TB ssd
4 TB hdd( recording here)
 
Post a logfile from a recording session at least 30 seconds in length where the issue occurred. We really do need it to be able to troubleshoot and offer accurate advice, why it requests one be included any time a new thread is opened in the Support section. A laundry-list of specs does not help.
