For some unknown reason my obs can't record above 120fps (In minecraft of all things) even when I know that my hardware should be able to run this extremely fast. I am using a 165hz monitor, with a i512600k, rtx3070, ddr5 ram with a samsung ssd for most of my things except for the recordings, which are kept in a 1tb seagate expansion drive. Idk why I can't record at 240fps? Whenever I do the whole thing lags out and it looks like a shit ton of frames are dropped, leading to massive frame rate drop even though my actual game is running at 700+ fps.
Can't record at above 120fps? (i5 12600k/rtx 3070)

Depends on the Preset used, looks like you'll need to use Preset P4 or lower or to have a shot at encoding 240FPS without lag.
Take a look at the charts in this article, they show the Quality/Performance for the old & new Nvenc Presets.

Also, you should be recording to an SSD or NVMe.
