I was able to record before, but for about a month or two I haven't been able to. When I click record it says "If you are using NVENC or AMD make sure the video drivers are up to date." My drivers are up to date, to my knowledge at least. Honestly, I don't know much about this type of stuff. Help would be very much appreciated, thank you.

Just to be sure, install/reinstall the latest WHQL drivers straight from nvidia.
If you still have the same problem, then try turning off game DVR (windows settings -> gaming -> game DVR).
