Question / Help Can't get smooth video when recording

I've tried many different settings/combinations as well as the auto configuration and all video seems to be choppy.

PC Specs:
OS: Windows 10 Pro
CPU: Intel Core i7 3770, 3.4 ghz, 4 core, 8 threads
GPU: NVIDIA GTX 960, EVGA Corp
RAM: 32 GB, DDR3

The game im trying to record is Sea of Thieves which is on my main SSD and I'm running on lowest graphics

Any suggestions on settings or other problems?

p.s. Log file attached is with auto generated settings
