Question / Help Can't get a good quality 60fps recording setup

I have a gtx 1080 7700k with a 1440p 144hz monitor. I am ok with recording at 1080p60fps, but for the life of me can't get a good setup that will record good smooth gameplay. I don't mind larger file sizes (although prefer smaller obviously where I can), but everytime I try and record it comes out very stuttery.

I wanted to have 2 audio tracks, so should I just keep it at mp4? Also is there any way to go into advanced mode and make it to where the file sizes aren't that big?

No. There are precisely ZERO situations where you should save directly to mp4.
If you need multi-track audio, use MKV container format, CRF/CQP based bitrate selection (depending on your encoder) with a CRF/CQP value of 14.
