You have to choose the application you want game capture to capture. It looks like you're trying to capture Windows Explorer, and that's not possible.

18:01:46.848: Output 'simple_file_output': Number of lagged frames due to rendering lag/stalls: 61 (6.4%)
18:01:46.848: ==== Recording Stop ================================================
18:01:46.849: Video stopped, number of skipped frames due to encoding lag: 66/951 (6.9%)

18:04:28.981: Output 'simple_file_output': Number of lagged frames due to rendering lag/stalls: 442 (4.6%)
18:04:28.982: ==== Recording Stop ================================================
18:04:28.982: Video stopped, number of skipped frames due to encoding lag: 460/9581 (4.8%)

You're also overloading your GPU.

Thank you for your reply. I changed somethings to lighten the load. Still black screen but at least I have way forward.

This one confuses me tho....

I cant see where I do that anywhere in the settings inside or outside

Right click your game capture source and choose Properties. When you add a game source to a scene you have to either choose a specific application, or have it capture any fullscreen application. If nothing is running, it's going to try and capture Explorer and fail.
