Windows 10 is fantastic if you don't borderline resources to barely run the settings you like...if you can barely run whatever 'most optimal' settings you like to run, then I would just recommend Windows 7 if your CPU is a big bottleneck in your setup...Windows 7 tends to run a lot lighter in terms of Windows components/processes in comparison to Windows 8/8.1 & 10 from personal experience.

Can always try dual-booting. One partition for Windows 7 & the other for Windows 10 on the same HDD/SSD, just to be safe and/or test how everything operates under different environments & go for the one that seems to be the most optimized & less of a CPU/Memory hog.

Windows 7 has enough underlying problems in its code (mainly in its aero implementation) that make it not recommended.

I had more problems with OBS Studio on Windows 10 than on Windows 7.
And Aero was kind of the thing that made it easy to grab video, especially if you wanted to record the desktop with software like Fraps.

This may depend on hardware and requirements. Windows 10 works better for USB 3.0 capture card on intel USB 3.0 controller with default USB drivers that came with windows 10. Some USB 3.0 capture (Elgato HD60-S) have "Windows 10" as part of requirements. Future games may soon drop windows 7 and below.

The one thing windows 7 have is the ability to turn off DWM (Desktop window manager) which was called Aero. When this is off, this allows having nearly no delay for gaming in windowed mode.

DWM on windows 7 and 10 still does not work nicely on multiple monitors of mixed refresh rates where one monitor is 60 Hz and the other at 75 Hz, resulting in an overall 60 fps making one monitor always jitters, or sometimes jitters if primary is at 75 Hz. I have managed to get all my monitors to 75 Hz so it is now smooth without much issues.
