It depends what you want to do: you can mix ANY number of microphones down to mono or stereo, and then pass that mix to OBS and stream to YouTube.
Google tells me that YouTube can accept 5.1 audio, and OBS can accept up to 6 channels. So you could potentially route your mics to up to six distinct channels. But neither OBS nor YouTube will currently handle more than six.
