I'd recommend the "Nerd or Die" video tutorial series for new users, though it's slightly aging at this point.
For more in-depth detail, EposVox has an "OBS Master Class" video series, which is decidedly less newbie-friendly. I also disagree with it on some minor points here and there, but on the whole it's solid for anyone looking to use OBS "seriously" and gain a more full knowledge.
