Basic settings for a standard VHS tape conversion?

Howdy,

I've used OBS for streaming but not much for basic recording. And definitely not for something with such a low resolution. Just looking for some basic settings I can use to get started.

I have a a device like this that I have my VCR plugged into: https://smile.amazon.com/dp/B07RX69KR8
I set it to 720p output and have it plugged into a standard USB HDMI Capture device.
I've added that device as the video capture device in OBS and that's where the questions start.

Since the device is outputting at 720p, should I set the canvas size to 720p to match?
The output from the converter stretches the video to 16:9. Should I resize the video capture window down to something like 960:720 so it's 4:3?
I generally use Premiere Elements to do basic video editing and I couldn't find a way to resize a video from 16:9 to 4:3 so I figured if I captured it into OBS at the 4:3 it might be better.

What other settings should I change within OBS to get the best output and what changes should I made while editing in post?

I'm not trying for 100% quality as the tapes I have aren't of anything super important. I just want the best quality I can get without going through crazy steps and needing terabytes of storage.

Just set the canvas to the 4:3 resolution you want then fit the video source to the canvas
Handbrake might also be able to convert the stretched image back to a 4:3 ratio
