AV1 selected encoder and color chroma ignored

No worries, I'm waiting too. I can finally stream PCM except on my streams produced with OBS. Oh well, I don't have to listen to the AAC at the other end....

About the log file.
I was hope to see the warning message in the log for hardware AV1 (NVIDIA) encoder when the 4:4:4 format was selected.
During development of OBS these new software based encoders were added only to support more than 8-bit per color component encoding, so always were out of scope. Other well known encoder with higher bitness support is "ProRes" and available in Custom Output (FFmpeg) for Windows.

Thank you, but I don't think I'll adopt some uncommon and unsupported codec.

I like OBS, but alas it seems too conceived more for streaming than recording. And its settings are a bit inconvenient (they aren't saved per encoder and they're scattered in Output\Video\Audio\Advanced). But I'm not sure if there's another software as good for gaming recording.
I guess I'll just wait and see if it will improve in the future.

I think your SOL for the time being with AV1. Give it some time. Same result with both SVT & AOM. Use H265 for now & keep an eye on that thread. [..]
Btw HEVC seems limited to i420\NV12 too, alas.
Also, I'm puzzled that better codecs seemed to need way more space than the old x264

Na, you're doing something wrong.

x264 has better compression.

Oh you're right, fixed.
I'll test HEVC then (I see it's only NVENC hardware).
