Audio tracks for Recording and streaming YouTube

Hi Guys, I want to be able to stream with game sound and mic sound but at the same time record using 2 tracks so I can take out my audio in production if needed. Only issue I have is the recording works when I put the file into Adobe Pro but only one of the tracks if coming through on the stream when I test it.
I did notice that in the advanced tab Output / Streaming I can only select 1 audio track, is there a work around for this that I am missing?
I've set things up as suggested:

1. Use a format that supports multiple audio tracks,
2. Check the tracks I want to record, in Settings,
3. Select which sources go to which tracks - i Advanced Audio Properties.

Audio encoder is FFmpeg AAC

One more thing I have a AMD Ryzen 9 7950X3D processor I was not sure if I should be able to select a different encoder as I only have the one option.

The stream only takes one track. Track 1 as you show in your screenshot. Put everything on that one, and use the other 5 to separate them for editing.

Source A: Tracks 1 and 2
Source B: Tracks 1 and 3
etc.

Or to follow the pro-live-sound mindset, where you have a single set of outputs to assign to everything, so the main outs go last and the local stuff goes first:

Source A: Tracks 1 and 6
Source B: Tracks 2 and 6
etc.

And you stream Track 6.
