If your source is 1280x720, there is no need to set a 1920x1080 canvas. You are upscaling source and rescaling it down.
Extra unneeded work and worse final quality.

Problem with that is i will have to move all my sources again by changing the canvas :S

Try installing portable OBS and try with that canvas

You can run OBS on a separate directory and use that to test new options.

what would you recommend also running 64bit or 32bit?

64 bit.
32 bit only recognizes 4 Gb of memory
