Hello everyone !
There's probably thousands of topics about that and if you spend a little bit of your precious time and share your huge experience with me to help me set up my obs for CS:GO I will be very thankful !

Is there any specific setting I should know besides estimator results? And which monitor refresh rate should I choose?

Your own monitor refresh rate (in system properties) isn't that relevant here.

If you're streaming to twitch and are not partnered, your upper limit on settings before viewers start landing in what I call Buffering Hell is about 1280x720 resolution, 30fps, 2000kbit video bitrate.
