Question / Help 2 issues | Quality and Size

quality - so recently my videos have been acting up, i record mine craft vides. so when i dont move in game the quality is fine, but when i move the quality goes so bad u cant see much. its not minecraft itself because it is normal in game the quality only shifts in the video

Size- so i have a square monitor. ive tried stretching the screen in the setting but with no luck im usually left with a black bar on each side of the video when uploading

any help would be great, thanks

For some reason it wont let me ajust the ratio im the obs settings
