Working with a single screen

In the past, I had multiple monitors. So I would move OBS to the second screen and just record my main screen. This worked great.

Now I have a single 32" Samsung curved screen. I tried running a PowerPoint in a separate window and have OBS record that window and keeping OBS open on the right hand side and this worked for recording. But the size of the resulting video is off and doesn't show full screen when I render it.

Any thoughts on how to record a full screen on a single screen?

Have you tried using multiple desktops with OBS on one and your PowerPoint on another? That doesn't work for OBS on a Mac but might work on a PC.

Configure Hotkeys in OBS to start and stop your recording and leave the program minimized during the recording.

Yes use virtual desktops it really works. Here is an article about how they work and the shortcut key to change desktops is {CTL} + {WIN} + {right arrow} or {left arrow} . Be careful because {CTL} + {ALT} + {right arrow} will turn your desktop 90 degrees, just repeat with the up arrow to restore. Also fun tip to screw with people who leave the computer unlocked :-).
