That works, but for how long? Windows 7 is out of support now, which means no security updates.
If it's completely off of the internet, including not even giving it a flash drive that's been in an internet-connected machine, then the answer is, "as long as the hardware holds out."
If you're *streaming* from Windows 7, then the answer is probably, "until someone hits you in a security hole that will never be patched," which may or may not be long at all.
Don't use outdated systems, unless you also enforce a 1950's level of connectivity for them.
