Question / Help Window capture : Recent problems

Hey everyone !

First, here is my macbook :
MacBook Pro (16 inches, 2019)
2,4 GHz Intel Core i9 8 cores
64 Go 2667 MHz DDR4
AMD Radeon Pro 5500M 8 Go
Intel UHD Graphics 630 1536 Mo

I have 2 questions :)

1 — I use obs to stream a talkshow on twitch for 2 months now. Everything was good until here (unless some littles crashes, but not live).
I basically have a scene where i cut a zoom conf-call to put 4 cams into 4 spaces. I use window capture for this.
Until now everything was good, but for 1 week now, i have some serious FPS issues : around 0,5 fps for their captures (even in the obs preview) but everything else is good. And if I switch to display capture, its fluid. So the problem is really from the window capture (but it used to worked perfectly before).
Do anyone here has an idea to fix that ? i can't stream with display capture, because i can't do anything on my screen.

2 — I use Shadow PC for several years now, and it works pretty well. You really can't see the difference with a local PC. I run it via the app.
I'd like to stream some games. Like Rocket League (and I know it's one of the worst to stream...). But I feel my shadow's acting like a capture card because my computer isn't giving power to run the game at all, and can fully focus on streaming. But I can't find the right settings. I use Display Capture (because Syphon doesn't work on catalina) and stream with x264 (I hear streaming with GPU only sends VBR signal which apparently is not a good thing on twitch) , it's kind of good, but not as pro as i'd like.
Do you guys have any clue on how I can improve that set up to have the best images possible? Streaming with GPU is a bad idea ?
