When I add text, I can't find any option to add a background color. Only text outline and drop shadow. Isn't there an option for text background color?

It seems the feature has been removed in the latest version of OBS Studio. I see a youtube video tutorial where there's the ability to set the background colour in the Properties dialog.

try this, after text has been entered, add a filter to it and select Color Sourceand pick the color you want. Make sure Color Source is below the text setting in sourses.

That works. And when it's set up the way you like, group the text and the color source so you can move them together. (Sorry if that's obvious. It wasn't obvious to me, but I'm just starting to use OBS).

Here is an update to this answer for OBS 27 (and perhaps earlier). You CAN change the color right in the dialogue for adding Text. But it's tricky because you have to realize there is a scrollable field beneath the text box where you add the text. If you don't scroll the field, you'll miss the widgets that let you adjust a bunch of things. This video at 1:30 min in clued me to that: https://www.youtube.com/watch?v=KgxeYicsRvc

On a Mac the Text background is not present. This seems to only be possible for Windows using Text (GDI+)
