why is my obs recording grainy?

I have watched and retried numerous settings to try and increase the quality. Any suggestions Here is an example

Youtube re-encodes everything
And you should not be on the streaming tab for setting recording settings

I should of mentioned I stream to zoom and record in obs.

Switch the output mode at the top to simple,
Recording quality to indsitinguishable
Recording encoder to nvenc.
