which is more stable for OBS streaming Big Sur or Catalina

I've just bought a 16" MBP intel ( 2.6GHz 6-core i7, 16gb, 4gb AMD 5300M).
It comes with Big Sur but I'm thinking of downgrading it to Catalina.

I am planning to stream to YoutTube 25fps 1280x720 via my ATEM Mini whilst using the ATEM software.

Which is more stable at the moment for my needs? Big Sur or should I downgrade to Catalina?

I find Big Sur in general to be more stable than Catalina was.

Which version of the OBS are you using? I was using 26 for a while before my old laptop died.

I notice 27 is still fairly new so wanting to minimise on my stream going down. I am planning to maybe stream for a couple of hours at a time.

I'm using 26. I have an issue with 27 because of a problem with the chroma key feature so I have not put it into production yet.
