In terms of games I can never notice a difference but my friend said that window capture is more "stable" so it is better but I'm not sure if that is right

Both Game and Window capture give the same quality of capture. Window capture is slightly less-performant than game capture, but the margin is tiny. There is no quality difference between the two. Chances are good that they are rescaling the source, and have not set a Scaling Filter on it from the right-click menu. No idea what you mean by 'more stable'.
If there is a back-end issue causing render or encoding frameskip, it will affect both capture types equally.

Whenever Im not I'll use window capture lol

I cant really agree here. In my case (doesn't matter what encoder is use) windows capture is always sharper than game capture. game capture is way softer (or blurry) than window capture. So for me there is a difference.

That's an issue with your setup then; they operate almost identically. If your GameCaptures are 'soft', you've messed something up in your setup.
