Question / Help What settings is best for recording Minecraft?

Yes, I've searched for videos online. None works.
My videos aren't "crisp", look at the video below and the screenshot taken in-game and compare them. You can see that the hearts are slightly blurry than the screenshot. Also, whenever I look around, the video turns slightly blurry. I've tried increasing Max bitrate but it still happens.

Also, one thing I've realised is that whenever I use x264 as the encoder my videos are choppy, so I use the Quick Sync encoder.
Any tips/specific settings that works well?

Use the local recording presets in simple output mode. Youtube re-encodes all uploads so its output will never look as good as the original recording.

Settings > Output
Select Simple mode at the top
Select a quality preset to auto-configure your settings. A hardware encoder like QSV or NVENC is usually a good choice here.

This is all I see when I click Settings, there's no Output:

I click on settings, still no Output section:

I have checked all those tabs, there is none with options to choose "Simple mode". Am I using the wrong OBS?

I got OBS Studio but my problem now is when I open OBS, my Minecraft's FPS drops to 10 FPS. When i close OBS, it shoots up to 80 - 200 fps. Any idea what I can do?
