It means that your settings are too high for your hardware's capabilities. That the video stream cannot be encoded properly.
If you are using NVENC, make sure you are NOT using the Max Quality preset, and have both the Lookahead and Psychovisual Tuning options turned OFF. All three of those can cause spontaneous Encoding Overloaded issues, and disabling them (and going to the Quality preset instead) resolves the issue with NVENC users in >99% of cases.

FerretBomb thanks for writing. I use OBS for recording video games (Motorsport's). Can you recommend some settings to get the best quality video etc.? Below is my system.
