Question / Help Webcam quality poor in OBS only.

I have a Logitech 930e as my webcam and it's actually been pretty much fine prior to this evening.
I'm going to back track everything I did today to try and resolve it and post my results here.

I've provided a grab of the webcams output using the profile picture feature in windows 10 (14342 r3)
(Yes, I'm moving a bunch of stuff around and cleaning, but I have not changed anything on my computer or various rigs)

Is this a common issue? I've tried reinstalling the webcam drivers which were already up to date. I've cycled USB ports. I've tried restarting as well. I'm going to try rolling back to the last OBS Studio again.

Any help would be appreciated. Also I'd like to add that with higher end webcams like the 930e, they tend to handle their own video pretty well and I'm curious if OBS is just pulling the raw video and trying to handle it on it's own or if something is interfering with the feed itself?

UPDATE: I've managed to ge the coloring right, although with some white grain to it using custom and selecting YUY video format, but 1080p footage is extremely laggy, like 1....2... update, laggy. I can reduce the effective resolution in the meantime, but again prior to this issue presenting itself I was able to simply add video capture device to the scene and the 1080p footage popped right up beautifully.
This latest development will at least allow me to continue my stream with some quality.

UPDATE2: I rolled back to Build 14295.R1 and the instant detection seems to work mostly, although webcam FPS is a bit slower than 60. I would imagine something in the new update changes how USB devices send out data or handshake and OBS suffers from this newest change.
