Trying to watch what's been recorded while the recording is still active. Almost like a preview.

Yes replay can do it but not looking for a snippet but more so the ability to watch wants been recorded from the beginning.

Can you just point an external player to the file?

MP4 might not work, for the same reason that you lose everything if it's not closed correctly. (PC crash, sudden power loss, etc.) And for the same reason that MKV survives that, it might also work for your purpose.
