I've been using OBS since late 2015 and never had any issues with it on my 2 previous computers, but since then I've gotten an updated setup. Every time I've attempted to either stream or record games the encoding overloads and the video becomes extremely choppy. I keep messing with the OBS settings and my PC's settings, but nothing seems to work. The only way I can get a video that isn't choppy is by lowering the video quality to the point that it's hard to watch. My PC isn't the best or newest, but I still find it extremely odd that I'm having these issues when they were nonexistent with my older, much slower, computers that didn't even have GPUs and were essentially home office PCs. I have had this setup for a few years now, but I now need OBS for school and work projects. I need high quality capture footage/decent stream quality and I'm starting to think I may need to build/buy a new setup.
